Ingredients You’ll Need
For Marination:
- 500g chicken (cleaned and cut)
- 1 cup yogurt (curd)
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp biryani masala
- Salt to taste
- Juice of 1 lemon
For Rice:
- 2 cups basmati rice
- 4 cups water
- 2–3 cloves
- 2 cardamom pods
- 1 bay leaf
- Salt to taste
For Biryani:
- 2 large onions (thinly sliced)
- 2 tomatoes (chopped)
- 2 green chilies
- Fresh coriander & mint leaves
- ½ cup oil or ghee
- Whole spices (cinnamon, cloves, cardamom)
- Saffron soaked in warm milk (optional)
Step 1: Marinate the Chicken
Marination is the secret to juicy and flavorful Chicken Biryani. In a large bowl, combine chicken with yogurt, spices, lemon juice, and ginger-garlic paste. Mix everything well so the chicken is fully coated.Cover and let it marinate for at least 1 hour (overnight is best for deeper flavor). This step ensures your chicken absorbs all the spices and remains tender after cooking.
Step 2: Cook the Rice
Wash basmati rice thoroughly and soak it for 30 minutes. In a large pot, bring water to a boil and add whole spices like cloves, cardamom, and bay leaf.Add the soaked rice and cook until it is 70% done. The rice should still have a slight bite. Drain and set aside. This is important because the rice will cook further during the layering process.
Step 3: Prepare the Biryani Masala
Heat oil or ghee in a deep pan. Add sliced onions and fry until golden brown. This step adds a rich flavor and slightly sweet taste to the biryani.
Next, add whole spices and sauté until aromatic. Add green chilies and tomatoes, cooking until the tomatoes become soft and oil separates.
Now add the marinated chicken. Cook on medium heat until the chicken is about 80% cooked and the gravy thickens.
Step 4: Layering the Biryani
Layering is what makes biryani special and flavorful.
- First layer: Cooked chicken masala
- Second layer: Half-cooked rice
- Sprinkle: Mint leaves, coriander, and fried onions
- Add saffron milk (optional)
Repeat the layers if needed. Finish with a top layer of rice and garnish.
Step 5: Dum Cooking (Final Step)
Seal the pot with a lid. You can use dough to lock the steam inside. Cook on low heat for 20–25 minutes.
This slow cooking process, called “dum,” allows all the flavors to blend beautifully. The aroma that fills your kitchen during this step is irresistible!
